Orzo is a short-cut pasta that resembles a large grain of rice. The pasta absorbs flavor very well, but the small size of orzo means it cannot catch sauce as well as other pastas. The classic use of Anna Orzo is in soup, but this versatile pasta is also excellent to use in cold salads, as pilafs, or as a stuffing for vegetables. Cook time: 7-8 minutes.
